SPICY BASMATI RICE PULAO WITH PORK NUREMBERGER SAUSAGES & CUCUMBER-ONION DAHI RAITA (COOLING YOGHURT SIDE)

Pulao or Pilaf, is a basic Indian style one-pot rice dish made with aromatic spices & herbs, using fragrant Basmati Rice. It can be prepared with meats, fish or vegetables. Different types of pulao &
their recipes vary from region to region. Our Spicy Basmati Rice Pulao with Pork Nuremberger Sau- sages is a perfect quick & hearty ‘tweak & eat’ meal accompanied with a cooling Yoghurt Raita!!

 ½ kg Meisterwurst Pork Nuremberger Sausages—⅓ " rounds
 2.50 kg Basmati Rice—washed & pre-soaked
 2 Stock Cubes—Veg/Chicken
 3 Large Onions—finely sliced
 3 tsp Pulao/Biryani Mix Powder—readily available
 2 tsp Coriander Powder
 2 tsp Cumin Powder
 23 tsp Red Chilli Powder—more if prefer spicier
 2 tsp Ginger-Garlic Paste
 2 tbsp Ghee/Clarified Butter or Vegetable Oil
 To Taste
 2 tsp Soy Sauce
 2 tbsp Fresh Coriander/Cilantro—finely chopped
For the Yoghurt Raita
 2 cups Fresh Yoghurt /Curd or Dahi
 1 Medium Onion—finely chopped
 1 cup Cucumber—peeled & finely chopped
 12 Green Chillies—deseeded & chopped tiny
 2 tbsp Fresh Coriander/Cilantro—finely chopped
 1 Sprig of Mint
 ½ tsp Cumin Powder—optional
 To Taste
FOR THE PULAO
1

In a large skillet/wok heat the ghee or oil & lightly fry the Pork Nuremberger Sausage rounds till nicely golden– remove & drain off excess oil on kitchen towel

To the remaining ghee/oil add the sliced onions & fry till translucent

Add the chilli, coriander, cumin & Pulao powders, as well as the stock cubes, ginger-garlic paste & soy sauce—fry on medium heat till the aromas emanate

Now, add the fried Pork Nuremberger Sausage rounds back into the dish...mix & fry again for 1-2 mins

To this, add in the washed Basmati rice—mix all together—add sufficient water to the mixture—put a lid & let cook for abt 20-30 mins

Check to see the water has evaporated & the rice is tender—switch off the stove & let the pulao sit for abt 10 mins with the lid closed

Open & serve garnished with fresh Coriander & some Dried Fruits

FOR THE YOGHURT RAITA

Chill the Yoghurt/Curd—add salt & cumin powder—whisk to a smooth consistency

Add chopped onions, green chillies, cucumber , coriander & mint

Stir together gently & serve chilled with the Pulao
