Pulao or Pilaf, is a basic Indian style one-pot rice dish made with aromatic spices & herbs, using fragrant Basmati Rice. It can be prepared with meats, fish or vegetables. Different types of pulao &
their recipes vary from region to region. Our Spicy Basmati Rice Pulao with Pork Nuremberger Sau- sages is a perfect quick & hearty ‘tweak & eat’ meal accompanied with a cooling Yoghurt Raita!!

In a large skillet/wok heat the ghee or oil & lightly fry the Pork Nuremberger Sausage rounds till nicely golden– remove & drain off excess oil on kitchen towel
To the remaining ghee/oil add the sliced onions & fry till translucent
Add the chilli, coriander, cumin & Pulao powders, as well as the stock cubes, ginger-garlic paste & soy sauce—fry on medium heat till the aromas emanate
Now, add the fried Pork Nuremberger Sausage rounds back into the dish...mix & fry again for 1-2 mins
To this, add in the washed Basmati rice—mix all together—add sufficient water to the mixture—put a lid & let cook for abt 20-30 mins
Check to see the water has evaporated & the rice is tender—switch off the stove & let the pulao sit for abt 10 mins with the lid closed
Open & serve garnished with fresh Coriander & some Dried Fruits
Chill the Yoghurt/Curd—add salt & cumin powder—whisk to a smooth consistency
Add chopped onions, green chillies, cucumber , coriander & mint
Stir together gently & serve chilled with the Pulao
